{Family Favorite} Baked Pineapple

We’re lost in boxes at my apartment, so I apologize for the lack of posts here lately. We move in less than 2 weeks and I don’t feel prepared at all. I have no idea how we’ve accumulated so much stuff since we last moved (2 years ago), but we have. The last thing I want to see is a box and packing tape!

In lieu of grocery shopping, we’re trying to use up things that we have in the freezer, refrigerator and pantry. The other night I made one of my favorite side dishes.

I just love those family recipes that have been part of my life since I was a little girl. These days you can get easily recipes from the internet, but back in the day it was either word of mouth from a friend or family member, or from a cookbook. My Grandmother used to make this Baked Pineapple dish. It’s so easy to make, yet it’s so flavorful!

Let me share it with you

But first let me tell you that it’s not particularly on the healthy side.

After all, there’s a stick of butter in there.

And no, Paula Deen has nothing to do with this!

But it’s oh so good!

And the leftovers are great for breakfast the next morning!

INGREDIENTS

  • 1 (16 oz) can of crushed pineapple (I used Libby’s No Sugar Added)
  • 4 eggs, beaten
  • 3/4 cup sugar
  • 1 stick of butter
  • 6 slices of white bread, cubed

 INSTRUCTIONS

Preheat the oven to 350 degrees.

First, crack the 4 eggs into a large mixing bowl and whisk them (or beat them with a fork) until they are a bit foamy.

Open your can of crushed pineapple.

Add in the can of crushed pineapple and the sugar.

Beat everything together until it’s incorporated.

Pour it into a greased 8×8 baking dish.

Cut up the bread into cubes.

Melt the stick of butter. Stir in the bread cubes,
making sure to coat all sides of the bread cubes with the butter.

Sprinkle on top of the pineapple mixture.

Bake for 35-40 minutes. The top should be golden brown!

Let it set for about 5 minutes before serving.

 

 

The Best Homemade Sweet ‘n Sour Chicken in the Whole Wide World

Sweet 'n Sour Chicken with Fried RiceI’ve learned that Sweet ‘n Sour Chicken is one of those dishes from a Chinese restaurant that is hit or miss. There is this Chinese restaurant near where my old office building was that had THE BEST Sweet ‘n Sour Chicken. They set the bar quite high, because I have yet to find another place that makes it like they do. They deep fry the chicken (heart attack on a plate, anyone?) and then they give you a container full of sweet ‘n sour sauce that has onions, green peppers and pineapple in it. It’s seriously to die for. I’ve had dreams about it. No really. I have.

In the past when I’ve ordered Sweet ‘n Sour Chicken from other restaurants, they only gave me the deep fried Chicken and a little container of sweet ‘n sour sauce. What? That’s it. Where are the onions, green peppers and pineapple? So I’ve just stopped ordering it from any other place but the original restaurant I got it at.  And if  it doesn’t have those items in it, it’s not Sweet ‘n Sour Chicken to me. Shredded Pork & Pineapple Tacos

One Saturday afternoon I actually had a free moment to watch a non-sports related program on TV. Whenever I watch TV these days it seems to be for some sporting event (which I LOVE!) so this was a nice little change. I miss the days of sitting around on the sofa and watching cooking show after cooking show on TV. I really enjoy Kelsey Nixon’s Cooking Essentials show on the Cooking Channel. She’s always making something that looks so good, yet so easy to make. This particular day she was making a Slow Cooker Shredded Pork that she was using for Shredded Pork & Pineapple Tacos. I’ve been getting tired of eating the same things for dinner so it was nice to welcome something different to the table.

5 Ingredient Friday: Blueberry Cherrie Smoothie

This week’s 5 Ingredient Friday recipe is inspired by my freezer. Right now it’s jam packed full of fruits and vegetables that I’ve washed up and put into freezer bags. Cherries were on sale a few weeks ago so I bought about 3 lbs of them and I pitted them, washed them, and bagged them up. I also have 2 quart sized freezer bags full of fresh blueberries that came in my CSA box. I love to use fresh fruit in Smoothies. I know that there aren’t any extra sugars in them and it’s usually much cheaper than buying frozen fruit from the grocery store. Another reason I love to use fresh fruit that has been frozen is because it makes the smoothie a lot colder and I don’t need to water it down with ice.

This recipe for a Smoothie can be adapted to whatever fruit you have on hand. I happened to have extra Cherries and Blueberries in my freezer so I used those.  I also use Peaches, Raspberries, Strawberries, Blackberries, and even Pineapple when I make Smoothies. It just all depends on what I have in my freezer and what I’ in the mood for.  This recipe that I make serves at least 2 people, if not 3. So you can probably cut this in half if you’re making it for yourself.

 

  • 2 bananas, chopped up (I prefer them to be frozen)
  • 1 1/4 cup of orange juice (you can use another flavor here)
  • 2 scoops of sherbet (pick your flavor; I use orange flavored)
  • 2 cup of cherries (fresh or frozen)
  • 1 cup of blueberries (fresh or frozen)

Put 1 cup of orange juice in a blender (My recommendation: Vitamix). Add in your two bananas and blend until the bananas are blended thoroughly with the orange juice. Add in your cherries and blueberries. Blend until the fruit is blended in, adding about 1/4 cup of orange juice.  Add in 2 scoops of sherbet and blend until it’s all incorporated.  Serve.
