The Best of Both Worlds – Pecan Pie Brownies

It’s so hard to believe that Thanksgiving came and went so quickly.  Everyone seems to be on Christmas overload already, and I have to say that I’m just not ready yet.  It’s not even December yet! So many people have their Christmas trees up, stores are playing Christmas music, and it’s supposed to snow a little here in Philadelphia tomorrow. I guess sooner or later I’m going to have to get with the program!

I knew I was going to see my sister and my Dad last week so I wanted to make a certain dessert to share with them.

And let me tell you that this dessert was a huge hit.

I’ve shared the recipe with some friends and everyone that made them absolutely loved them.  And it’s because they are absolutely amazing!

Your life will never be the same after you try these Pecan Pie Brownies from Just a Taste. Believe me.

I had the pleasure of meeting Kelly from Just a Taste when I was in Disney World for Food Blog Forum Orlando. She’s so nice and she shared so much valuable information with us! I read her blog and she always has recipes on there that I want to make. She also has an amazing book out titled “Food Blogging for Dummies”.

Right when I saw this recipe on her blog I just knew it would be a hit.

How is it 2012 already?! Is it just me or did it seem like the whole Y2K craze was going on not too long ago?! I hope everyone enjoyed the holidays.

I’m not really one to set goals or resolutions. I kind of just go with the flow. I got quite a few kitchen related items for Christmas, so they have been fun to play with! I’m sure you’ll see posts about them coming up in the next few weeks!

I had some time off of work, which was fabulous. I would have to say the highlight of my holidays was being able to attend the 2012 Bridgestone Winter Classic and the Philadelphia Flyers vs New York Rangers Alumni game at Citizens Bank Park.  The Winter Classic didn’t end with the outcome I had hoped for, but it was truly an amazing experience. I’m so happy I had the opportunity to go.

Baking for the Holidays

Since I love baking, I always plan a day of baking around the holidays! This year I will be spending all day on Friday baking my behind off. There are so many different things I want to make. This is the perfect opportunity for me since I can give most of it away. Don’t get me wrong, I’d love to keep it all for myself, but that is the last thing I need!

So here’s what I’m making…

5 Ingredient Friday: Cranberry Sauce with a Kick

I grew up eating the Ocean Spray Jellied Cranberry Sauce. I’ve always been a big fan of it, because it’s all that I knew.  My Mom used to run a knife around the edge so that the Cranberry Sauce would come perfectly, with the can indent around it and all. My Aunt used to make a Cranberry Relish during the holidays and I used to turn my nose up at it which was typical. I grew up being a very picky eater. I’m still picky to an extent, but it’s not quite as bad.  The last couple weeks of my CSA, we got Fresh Cranberries. I didn’t know what to make with them, so I decided that I should try to make some real Cranberry Sauce. Not that canned jellied kind. So I was looking at some recipes, but nothing really jumped out at me. So I decided to put a bunch of ideas from the recipes together to see how it would turn out. And it’s done in 5 Ingredients!

  • 12 oz fresh Cranberries, washed
  • 1/2 cup packed Brown Sugar
  • 1/2 cup granulated Sugar
  • 1 cup Orange Juice (about 3-4 oranges) + zest of 1 Orange
  • 2 Tablespoons Brandy

Juice the oranges and pour the orange juice into a pot.

Add in the Brown Sugar, Sugar, and Orange Zest.

Add in the Cranberries.

Bring to a boil over medium heat, and then reduce to a simmer.

Let it simmer for about 10 minutes. The Cranberries will burst, but some will stay whole.

Remove from the Heat.


Stir in the Brandy and set aside to cool. Refrigerate.

I will say that the Brandy gave it a bit of a kick! I could really taste it. If you’d rather not have such a strong Brandy taste, I’d suggest putting the Brandy in with the Orange Juice and letting it cook out a bit. Since I added it in at the end it’s a bit more potent.  But I was pretty happy with how it turned out! I think a little bit of Grand Marnier would have really been good, but I didn’t have any on hand. I was happy with this recipe though! It had just enough sweetness to it.
