Vanilla Drops


I can’t believe that it’s already December. I feel like as I get older I have a harder time getting into the holiday spirit. And this year isn’t any different. I just can’t get into it. I don’t even want any gifts – there’s nothing that I want; there’s nothing that I need. I tried baking some cookies to see if it helps to get into the holiday spirit, but it just didn’t. So I can’t share that with you, but I can share some awesome cookies! And I’ll do just that.

We’ve been making this recipe for years in my family, and I don’t recall which cookbook it came from. I did not come up with the recipe. I just know that these cookies are super simple to make, and they always taste great. I love to use Penzey’s Double Strength Vanilla for a wonderful vanilla flavor. Make sure you use the real deal – not that imitation stuff. I think it really makes a difference.


  • 3/4 cup butter
  • 1 1/2 cup sugar
  • 1 egg
  • 1 1/2 teaspoons vanilla
  • 1 3/4 cup flour
  • 1/4 teaspoon salt


Preheat the oven to 350 degrees.

Cream Butter and Sugar.

Add egg and vanilla and blend well.

Stir together the flour and salt. Add to the creamed mixture and blend well.

Drop the dough by rounded teaspoonfuls onto the [greased] cookie sheet, leaving 2 inches between each drop.

Bake for 8-10 minutes. The cookies should be slightly browned around the edges. The centers may appear to be a bit undercooked, but they will firm up as they cool.

Cool slightly on the cookie sheet and then transfer to wire racks to finish cooling.

MY NOTE: The cookies take 8 minutes in my oven. If I leave them in for 10 minutes they are crunchier, which I don’t like. I love a nice chewy cookie, which is how these should be.

Thin Mint Cupcake from Crumbs Bakeshop

Crumbs Bakeshop
has released a Girl Scout Thin Mint Cupcake.

So you just know that I had to try it. I love cupcakes, and Thin Mints are one of my favorite Girl Scout Cookies.

Here’s the details on the cupcake –  It’s a Devil’s food cake filled with fudge and topped with mint cream cheese frosting edged in chocolate cake crumbs with a Girl Scout Thin Mints® cookie in the center.

Now to me, mint cream cheese frosting doesn’t really sound all that appealing. But I’m in the camp that believes that cream cheese frosting belongs on Carrot Cake. I have to say it was just okay. I didn’t take a bite of this cupcake and ohhh and ahhh that it was so good. I was just kind of like “ehhhh” on the whole thing.

What would I have done differently, you ask? Well personally I would’ve gone with a mint  flavored chocolate cupcake topped with a vanilla buttercream frosting that was edged in crushed thin mint cookies. And of course a whole thin mint cookie would go on top.

So while I like the idea of a Thin Mint Cupcake, the execution really underwhelmed me.

Insomnia Cookies – Center City Philadelphia

A while ago Mr. Curly Fry’s brother told us that we have to try Insomnia Cookies. That they’re really good and that we would love them. So I looked them up and at the time they only had locations in West Philly and one out near Temple. I’m willing to travel distances for cupcakes, but not cookies. So I kind of forgot about them and went on about my business.

Fast forward to yesterday. I saw something on about this new Insomnia Cookies store that opened up in Center City. I was intrigued. So I looked up the location and what do you know?! They are located not even a full block from my office. Uh oh. This could get dangerous! So I knew that I’d have to make a pit stop on my way home from work to pick up some cookies. How could I not? As I was walking down the street I could literally start to smell the cookies. So I followed the scent of freshly baked chocolate chip cookies and I ended up in their store!
