Everyone pretty much knows I’ve got a fierce sweet tooth, so whenever I have to take something to a party or a girl’s night, I’m usually asked to bring dessert. And that’s totally fine by me because then I get to make something new to try! I love being able to make something new, taste it, and get it out of my house so I don’t it all!
I have a thing for Buttercream frosting, as we all know. So I like to incorporate that into things that I make because I could literally sit and eat it with a spoon (oh wait, I totally did that!) So when I was trying to decide what to take to my friend’s house for a girl’s night, I decided that I wanted to make some Chocolate Chip Cookie Bites with Chocolate Chip Cookie Dough Buttercream. I wanted something you could pick up and eat and that wasn’t too fancy.
So I cleaned my trusty jelly roll pan that hadn’t even been put away since I just made that amazing Texas Sheet Cake recently. I knew I wanted to make Chocolate Chip Cookie Bars and then use a biscuit/donut cutter to cut circles.
For the Cookie Bars:
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup (2 sticks) butter, softened
- 3/4 cup granulated sugar
- 3/4 cup packed brown sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 2 cups (12-oz. pkg.) Semi-Sweet Chocolate Morsels
- 1 cup chopped nuts (optional – I left these out)
Preheat oven to 375° F. Grease 15 x 10-inch jelly-roll pan.
Combine flour, baking soda and salt in small bowl. Beat butter, granulated sugar, brown sugar and vanilla extract in large mixer bowl. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in morsels and nuts. Spread into prepared pan.
Bake for 20 to 25 minutes or until golden brown. Cool in pan on wire rack.
Now you don’t want to make this Chocolate Chip Cookie Dough Buttercream too soon or you won’t have any left for the cookies! Trust me, I know.
For the Frosting
2 sticks unsalted butter, at room temperature
½ cup light brown sugar, packed
2 1/3 cups confectioners’ sugar
2/3 cup all-purpose flour
½ tsp. salt
2 tbsp. milk (I used 2 tbsp. heavy cream – both work well)
2 tsp. vanilla extract
Beat together the butter and brown sugar in the bowl of a stand mixer fitted with the paddle attachment until creamy. Mix in the confectioners’ sugar until smooth. Beat in the flour and salt. Mix in the milk and vanilla extract until smooth and well blended.
Do you even need to ask how these were? The cookies were so soft & chewy, exactly how I like them. The Buttercream tasted just like cookie dough, I wanted to eat the entire batch! And there were plenty of scraps leftover from the cookie bars to snack on! So I packed them up and off I went, hoping that none of them would be coming home with me! And they didn’t!
