Cake Batter Pudding

So I was sitting on my sofa one afternoon trying to think of something to make for dessert for that evening. I wanted to make something easy; I didn’t want to spend all afternoon in the kitchen. I thought about making cupcakes, but I like to set my butter out hours in advance and I hadn’t done that. So my mind immediately went to thinking about cake batter flavored things. So then I thought about Cake Batter Pudding. I hadn’t seen anyone post anything about that before, but I knew it had to be done by someone. So I googled it and came across a post from Mrs. Happy Homemaker. We must’ve been on the same wavelength since she posted this at the beginning of March.

[The original recipe is here; I changed amounts/sizes]

INGREDIENTS

  • 3.4 oz box instant vanilla pudding
  • 1/4 cup funfetti cake mix
  • 2 cups of milk
  • sprinkles, to garnish

INSTRUCTIONS

Combine the pudding mix & cake mix in a bowl.  Add the milk to it, and beat on low speed for 2 minutes.  Refrigerate for 3-5 minutes, until set. Garnish with sprinkles.

As you can see this is a super simple recipe to make. It only takes a few minutes to prepare. Since I used a smaller box of pudding than the original recipe, I cut down the cake mix a bit. I’m sure you could put 1/2 cup in there if you wanted, it would just have a stronger cake batter flavor to it.

Now I have to tell you that after I tasted the pudding it immediately took me back to my childhood. I always remember my sister and I fighting over who got to lick the bowl after my Mom made a cake or brownies. One person got the beaters, the other got the bowl. I don’t know about you, but I always wanted the bowl.  And to this day I still lick the beaters and the bowl. Am I the only one? Do you do that too? Please tell me I’m not alone here!

This pudding tasted just like cake batter. Seriously. When I was eating this pudding I felt so naughty – like I wasn’t supposed to be eating it. I love the taste of cake batter and brownie batter (oh! that post will be coming up soon…) so sometimes I’ll have a little taste! But with this pudding I could eat my whole little portion and not feel bad about it!

So I highly consider trying this. Can you imagine all of the possibilities? I’m sure there are some flavor combinations I didn’t list.

  • chocolate pudding + chocolate cake mix
  • lemon pudding + lemon cake mix
  • oreo pudding + white cake mix
  • butterscotch pudding + carrot cake mix
  • banana pudding + banana cake mix
  • coconut cream + german chocolate cake mix
  • pumpkin spice pudding + spice cake mix

Have you tried any of these flavors before? What was your favorite?

  3. Hi Jen, I’m Anne from Life on the Funny Farm (http://annesfunnyfarm.blogspot.com), visiting from the TALU. This looks amazing, I will have to try it. I know my kids will love it (as will I). I just pinned it. Thanks!

  4. Hello. This is my first time popping in via the TALU. Had to chuckle at your blog name. I first read it and made a “huh?” face because it sounds like when you refer to someone as one fry short of a happy meal, etc. meaning that they’re not all that bright, but then I realized that as the curly fry in the bunch, that made you the special one. :)

I have a sister, so we always had to split who go the beaters and who got the bowl. I’d take whichever I could get, but the bowl was definitely easier LOL. You sound like me by the way – I’ll get a random idea in my head, assume that it’s been done before – it seems like EVERYTHING has been done before somehow – and Google it to see what turns up. Sometimes that helps me reign in my idea, but sometimes I look at the search results and think Wow, that is soooooooooo now what I had in mind!!!

    I don’t have any cake mix in the house, but I do have some brownie mix …. gotta run … ;
