Crumbs Bakeshop has released a Girl Scout Thin Mint Cupcake.
So you just know that I had to try it. I love cupcakes, and Thin Mints are one of my favorite Girl Scout Cookies.
Here’s the details on the cupcake – It’s a Devil’s food cake filled with fudge and topped with mint cream cheese frosting edged in chocolate cake crumbs with a Girl Scout Thin Mints® cookie in the center.
Now to me, mint cream cheese frosting doesn’t really sound all that appealing. But I’m in the camp that believes that cream cheese frosting belongs on Carrot Cake. I have to say it was just okay. I didn’t take a bite of this cupcake and ohhh and ahhh that it was so good. I was just kind of like “ehhhh” on the whole thing.
What would I have done differently, you ask? Well personally I would’ve gone with a mint flavored chocolate cupcake topped with a vanilla buttercream frosting that was edged in crushed thin mint cookies. And of course a whole thin mint cookie would go on top.
So while I like the idea of a Thin Mint Cupcake, the execution really underwhelmed me.
